That sounds like a lot of fun. When I was taking flying lessons, my instructor and I would occasionally fly from outside of Stapleton airport to Cheyenne WY airport for lunch. At that time there was an old plane (I think DC10) fuselage that had been converted into a restaurant. We were not the only ones that would fly there for lunch.

The one thing I really remember flying up the front range of the Rockies was the choice of mild bounce by going slower, or heavier bounce and get their sooner. We flew right where the air would roll after coming across the Rockies.
